Quinoa Black Bean Avocado Salad
An easy and healthy vegan salad
INGREDIENTS
- 1/2 cup raw quinoa
- 1 cup water
- 1 cup corn kernels (fresh, canned, or frozen)
- 1 cup cooked black beans (canned or made fresh)
- 2/3 cup chopped tomatoes
- 3 green onions, sliced thin
- 1/2 avocado, diced
- 2 tbsp chopped canned Hatch or other green chilies
- 3 tbsp olive oil
- 3-4 tbsp lemon juice
- 1/2 tsp salt or to taste
- 2 cups arugula
INSTRUCTIONS
- Cook the rinsed quinoa in 1 cup of boiling water until done, about 15 minutes; drain
- Mix all the other ingredients except the arugula in a bowl
- Wash the arugula and put on a serving plate
- Top with the quinoa mixture and serve
Yield: 3-4 side salads
